‘Prickly Pear’

Celebrating Christmas Eve in New Mexico. Todd and I will be having clams and pasta tonight, taking Gracie for a ride to see the luminaries.
 
Today's painting is a prickly pear cactus that is in my back yard. In the spring it has yellow flowers and in the fall, purple pears are where the flowers were. This part of the cactus is edible. If anyone want them, come on over they are all yours. Anytime I go near that cactus I end up with thorns.
 
Eggnog Mimosa
 
2 oz eggnog
3 oz champagne
Nutmeg and cinnamon stick for garnish

Add the eggnog to the champagne flute, letting the creamy base settle in the glass.

Slowly pour champagne over the eggnog to maintain the fizz.  Be careful not to overflow as the bubbles rise.

Finish by sprinkling ground nutmeg over the top and adding in a cinnamon stick.
